Crockpot Osso Bucco



Cooking in the crockpot is so easy and comforting.  The house is filled with nice aromas all day long.  I made this Osso Bucco recipe from Ricardo's slow cooker cookbook and it's really good. I did make some changes to the recipe to satisfy my taste.

Ingredients

1/4 cup of flour
6 pork shanks (you can also use veal)
2 teaspoons of olive oil
1 onion finely chopped
3 garlic cloves finely chopped
1 cup of dry white wine
1/4 cup of tomato paste
2 celery stalk finely chopped
2 carrots finely chopped
The zest of 1 lemon
1 cup of veal stock
1 teaspoon of dried thyme
Salt & pepper

1- Coat the shanks with flour and cook them in the olive oil on each side until golden brown.  Season with salt and pepper and add to the slow cooker.

2- In the same saucepan soften the onion and garlic. Add more olive oil if needed. Deglaze with the white wine and add to the slow cooker.  Add the rest of the ingredients.  Mix well.  Season with salt and pepper.

3- Cover and cook for 6 hours.

It's that easy!  The meat is really tender and the sauce is so tasty!  Serve with mashed potatoes.  Makes a great Sunday meal.
