Crispy Roasted Chicken


This chicken is really tasty and juicy.

Ingredients

1 chicken (3 pounds or 1.5 kg)
3 teaspoons of olive oil
1 teaspoon of paprika
1/2 teaspoon of garlic salt
1/4 teaspoon of celery salt
1/4 teaspoon of ground pepper
1 teaspoon of thyme
1 teaspoon of oregano
1 lemon
4 garlic cloves

1. Clean chicken under cold water and dry well with a paper towel.

2. Put chicken in a dripping-pan and add water to the bottom part of the pan (about half way).

3. Cut the lemon in quarters and place inside the chicken cavity with the pealed garlic cloves.

4. Mix together the olive oil and spices.  Spread 1/4 of oil mixture between the skin and the breasts of the chicken and spread the rest over the hole chicken.

5. Cook at 400 for one hour with rack in center of the oven.

6. Let chicken rest for 10 to 15 minutes.
