5 min. Pesto and Artichoke Pizza




I usually make a nice and easy supper for my husband and I on Friday nights and we eat when the kids are in bed.Yesterday, I had planned to make a cheese fondue but the roads were bad, because of freezing rain, and I did not feel like driving 15 minutes to go to the store.I opened the fridge and the pantry and this is what I made in 5 minutes:Pesto and Artichoke pizza on pita bread.Well it was delicious!!!

Pesto and Artichoke Pizza

2 pita bread
2 tablespoons of pesto (I use Classico)
2 artichoke hearts diced (canned or in oil)
Sliced sun-dried tomatoes in oil
1 cup of grated mozzarella cheese
Sliced black olives

Preheat your oven to 350.

Place the pitas on an aluminum paper lined baking sheet.  Spread 1 tbs of pesto on each pita.Follow by the artichoke hearts, Sundried tomatoes, 1/2 cup of mozzarella cheese per pita and black olives.


Cook for 10 minutes.  And that's it! You can serve with a salad or some home made fries.

You can easily cut those pizza in small slices and serve them as tapas (appetizers). Read my post on entertaining with tapas Here.
